Vegetable cream is an emulsion of vegetable oil and fats, as well as stabilizers. The taste of this product is very similar to the natural one. The plant analogue is denser, thicker, with a stable consistency. According to the recipe given below, from one liter of such cream you can prepare three liters of whipped foam for decorating the cake. This cream is produced in containers with attachments that are convenient for decoration. You can often find them in markets - whipped cream in a can.

Natural cream is a very high-calorie, fatty product with a rich milk taste. They come in white or with a slightly yellow tint. Only those with a fat content exceeding 30% are suitable for decoration. Less fatty ones will either not be able to be whipped, or they will fall very quickly. They are less airy, unlike plant ones, and more capricious.

If the technology for preparing the sweet mass is not followed correctly, they will easily settle or spread. However, two weighty arguments can be put forward in their favor - taste and healthfulness, in contrast to the low-calorie nature of their plant counterpart.

Don't get too carried away with vegetable creams. They contain many preservatives and stabilizers. This is, rather, an emergency aid for the housewife when she simply doesn’t have enough time to tinker with a natural product. This cream does not use sugar, so it has a neutral milky taste. Thanks to this, vegetable cream can be combined with any type of baked goods. You can add powdered sugar to the cream, thereby sweetening the confectionery product.

It is perhaps beyond the power of other described masses to compete with natural whipped cream as a decoration for home-baked goods. As soon as you think about baking and decorating a cake with whipped cream at home for the first time, I advise you to choose an industrial product. The packaging will indicate the fat content percentage and shelf life of the cream.

The ideal option should not contain anything else other than the cream itself. The minimum percentage of fat content of industrial cream is 10, and the maximum is 42. In the market from grandmothers you can buy a product with a fat content of 50% or more, but you cannot get a high-quality cream from it. Based on the recipe, when whipping you will get natural butter, but not whipped cream. The optimal percentage of fat content of cream, which after whipping is suitable for decorating baked goods, is 30-40.

To create the creamy mass you will need:

  • 200 g cream;
  • 2 tbsp. l. sugar or powder;
  • 2 tsp. vanilla extract.

  2. Add sugar and vanilla extract (you can use any other flavoring if you wish).

Let's start with Stephanie's cake. Of course, it does not contain complex cream structures, just several complex layers. But the presented dessert will definitely delight loved ones with its aftertaste, light citrus accent and raspberry jam, despite its laconic design.

Ingredients:

  • 750 g flour;
  • 500 g butter;
  • 3 chicken eggs;
  • 15 g soda;
  • 50 g honey;
  • 200 g powdered sugar;
  • A pinch of salt;
  • 200 g semolina;
  • 1 liter of milk;
  • 50 g rum;
  • 150 g chocolate;
  • 170 g sugar;
  • 200 g raspberry jam;
  • 30 g orange zest.

Preparation:

  1. The first step in preparing the cake will be baking the cake layers. Sift flour and soda through a sieve. Then beat 250 g of soft butter with powder until smooth. Stirring constantly, add eggs, honey and a pinch of salt one by one. Knead the dough by adding flour to the butter. Divide into four equal balls and place in the freezer for half an hour.
  2. Roll out the cold balls on a floured wooden board. Using a template (plate, bottom of the mold), cut out a round cake about 24-26 centimeters.
  3. Preheat the oven to 180 degrees. Line a baking sheet or pan with parchment, place the crust on it and bake for 7 to 10 minutes until done.
  4. Place the finished base under a kitchen towel while the rest of the cakes are baked.

While the dough is being prepared, make the semolina cream. For it you need to boil 750 ml of milk with sugar, combine the remaining 250 ml with semolina and pour into the hot mixture. In this case, you need to stir the cream all the time with a spatula. Cook for up to 5 minutes over low heat until the mixture becomes thick and the cereal is cooked. Remove from heat and let cool.

Let's start assembling the cake:

  1. Spread the first cake layer with raspberry jam and generously add milk cream.
  2. Cover with a second layer, repeat the layering order, not forgetting to grease the sides of the cake.
  3. Cover the last cake with liquid chocolate (break into pieces and melt in a water bath).

The treat can be served 8 hours after assembly. Keep refrigerated.

Birthday cake

Stefania cake has one more method of preparation and already has a rather complex external design. Therefore, such a dessert can easily become a decoration for a large festive table. Consists of cakes soaked in two delicious creams and mascarpone cheese.

Ingredients:

  • 570 g sugar;
  • 4 chicken eggs;
  • 50 g butter;
  • 500 g flour;
  • 500 g sour cream;
  • 5 g soda;
  • 250 g mascarpone cheese;
  • 100 g powdered sugar;
  • 100 ml water;
  • 5 g lemon juice.

The first step will be to prepare the cakes:

  1. Sift the flour (we will use 450 grams for the dough, the rest for dusting under the cakes).
  2. Beat butter with sour cream until smooth. In a separate container, beat three yolks with sugar, combine everything and add soda, slaked with lemon juice.
  3. Add flour and knead into a soft dough. Divide it into 6-10 identical balls, depending on the diameter of the template used (from 20 to 26 cm).
  4. Roll out each part on a table sprinkled with flour and cut out a circle according to the dimensions of the template. Make punctures all over the dough with a fork.
  5. Line a baking sheet with parchment, move the crust and bake in the oven for up to 5 minutes at 200 degrees.
  6. The cakes should only brown a little around the edges, otherwise they will crumble a lot. You need to stack them on top of each other, and cover them with a towel.

Next is the preparation of the cream: combine sour cream with mascarpone and powdered sugar, carefully move and grease all the prepared cakes with it (leave the top one). Wrap tightly with cling film and refrigerate overnight to soak.

Next step: preparing the protein cream for the top layer. To do this, pour 400 g of sugar into a saucepan, add water and turn on high heat. Bring to a boil, reduce heat. Beat 150 g of egg whites with a mixer until stiff peaks form. When the syrup is ready (in a glass of cold water, a dropped drop has turned into a ball), very slowly and constantly stirring, add it to the whites. Beat until completely cool; you can use a bowl of ice as a cold stand. This way the mass will quickly acquire the desired consistency and temperature.

Cake decoration depends on the imagination of the creator. You can cover the top of the dessert with the resulting cream. Next, using a pastry bag with tips and food coloring (optional), decorate the cake with roses and openwork sides.

Tiffany with strawberry cream

The next dessert is Tiffany cake, it can be prepared with classic Stefania cakes. You can also take a risk and make something special, unlike other desserts.

In the presented version, the base is similar to the previous cakes, but it all depends on the size and weight of the product itself. You can make a small portion, so if you get an unsuccessful result, you won’t be so sorry for the ingredients used. Therefore, we take half the portions from the previous cake.

Ingredients:

  • 2 yolks;
  • 90 g sugar;
  • 30 g butter;
  • 10 g vanillin;
  • 8 g baking powder (instead of soda);
  • 300 g flour (for dough 230 g);
  • 100 g sour cream.

For the strawberry cream:

  • 300 g strawberries;
  • 1 chicken egg;
  • 25 g flour;
  • 150 g cream;
  • 100 powdered sugar.

For protein (Tiffany color):

  • 200 g sugar;
  • 50 ml water;
  • 70 g proteins;
  • Food coloring.

Preparation

Preparing cakes and dough is no different from Stefaniy. You need to beat the yolks, sugar, sour cream and butter, then add flour with baking powder and knead the dough. Divide into pieces (for this portion there are 3-4 balls, a circle with a diameter of 20 cm), roll out and bake for 5 minutes at 200 degrees.

But the cream is completely different, it consists of strawberries, has a sweet but not cloying taste, an unsurpassed aroma and a soft pink color. To prepare it you need:

  • Puree pureed berries until pureed;
  • Combine flour, egg, powder and pour into strawberries;
  • Cook over low heat, stirring constantly, until the mixture becomes thick;
  • Cool;
  • Whip the cream until fluffy;
  • Very slowly and carefully combine the two mixtures.

Protein cream is prepared according to the standard recipe described above. If a lot of decor is planned, the proportions need to be increased to the original volumes.

To finish the cake, brush the cake layers with strawberry cream. Cover the top and third cake layers, as well as the sides, with Tiffany-colored egg white. Decorate with white cream in the form of stars, flowers, zigzags, patterns. Place in the refrigerator for 8 hours.

As you can see from the recipes presented, the base is almost the same everywhere. But the whole essence, taste and attractiveness depends on the cream filling and external design of the cake.
