Step-by-step cooking process

The process of making the cake is as follows:

  1. Start by preparing the base. To do this, grind all the shortbread cookies in a blender until they become crumbs. Heat the butter separately and pour it into the cookies. Sprinkle sugar on top and mix everything thoroughly. The finished dough should be thick and slightly sticky.
  2. Place parchment on the bottom of the springform pan and grease it and the sides with butter. The dough is placed on the bottom and rolled out over its entire diameter. If desired, form sides. Place the mold in the oven, preheated to 175°C for 10 minutes. Then take out the mold and wait for the cake base to cool completely.

  7. Place the mold in the oven, preheated to 200°C for 10 minutes. After the specified time, the temperature is reduced to 120°C and baking continues for another 60-90 minutes. Baking time may differ for different ovens, so focus on the edges and center of the pie - the edges harden, but the center remains liquid.
  8. After the specified time has passed, the oven power is turned off, but the cheesecake is not taken out. It sits like this for 30 minutes, then the door is opened slightly and the cake is kept for another 30 minutes.
  9. Make a layer for covering. Beat sour cream with sugar and lemon juice. Brush the cheesecake with this mixture and leave to cool at room temperature. Then put it in the refrigerator for 7-8 hours.
  10. As soon as the cake has frozen, carefully run a knife along the edge of the mold so that it moves away from the walls, and carefully remove the cake from the mold. Transfer it to a dish and decorate with pieces of fruit and berries.
