To make a rustic wedding cake you will need the following ingredients.

For the biscuit:

  • flour - 1 glass;
  • sugar - 1 glass;
  • milk - 100 ml;
  • egg - 1 piece;
  • sunflower oil - 50 ml;
  • cocoa powder - 3 tablespoons;
  • baking soda - 1 teaspoon;
  • baking powder - 1 teaspoon;
  • vanillin - 1 teaspoon;
  • salt - 0.5 teaspoon;
  • hot water - 100 ml.

For buttercream:

  • cream - 1 glass;
  • powdered sugar - 1 tablespoon.

For the buttercream:

  • butter - 1 pack;
  • condensed milk - 200 g.

For the ganache cream:

  • chocolate - 60 g;
  • cream - 60 ml.

The amount of ingredients is calculated for 1 cake.

Cooking - next.

  1. Separate the white from the yolk. Beat the egg whites with a blender.
  2. Mix all dry crust ingredients. Stir so that there are no lumps. Use a whisk when mixing.
  3. Add the yolk to the vegetable oil and combine with milk.
  4. Add the mixture to the flour and cocoa, mix well with a spoon.
  5. Knead the dough, then add the egg white.
  6. Pour in half a glass of boiling water. You will get a liquid dough similar in consistency to sour cream.
  7. Take a round baking dish, pour in the dough and place in an oven preheated to 180 degrees for 40 minutes.
  8. Cool the cake on a wire rack, turning the convex side down to level the surface.
  9. Bake the second cake.
  10. While the cakes are cooling, prepare the buttercream. Take cream, half a spoon of vanilla and a heaping tablespoon of powdered sugar. Beat at highest speed until the cream begins to thicken. To avoid cream separation, reduce mixer speed.
  11. Cut the cakes in half. Since the cakes do not need impregnation, you can proceed straight to assembly.
  12. Brush the halved cake with cream. Cover with the other half of the cake. Do the same with the second cake layer.
  13. To decorate the edges you will need 200 g of butter and the same amount of condensed milk. Soften the butter with a whisk. Add condensed milk. Butter cream has a dense structure, so it is traditionally used to level baked goods. Grease the top and sides of the cake.
  14. Use ganache cream for decoration. Pour hot cream over the chopped chocolate and leave for 5 minutes. Mix thoroughly. Using a pastry syringe, make chocolate drips on the cake around the circumference of the top layer. Make a border at the base of the cake.
  15. Decorate the top of the cake with strawberries.

Super moist chocolate cake is ready. It has a moderately sweet taste and delicate texture. Even a beginner can handle the preparation. A rustic wedding cake, as in the photo, will fit perfectly into the wedding concept.

Master class on making a wedding cake

A wedding cake will have to be baked in several stages, but the dough and cream in the presented version can retain an attractive appearance and fresh taste for a long time if you put the finished tiers in the refrigerator.

Products are indicated for the lower tier with a diameter of about 30 cm (3-4 cakes). For the next one, you should take half the amount of ingredients and a mold with a diameter of 15-18 cm.

Next, you can once again reduce the amount of products and bake a third tier of even smaller diameter. It can be baked in an Easter pan and then cut into cakes with a knife, fishing line or string.

Products:

  • 320 g wheat flour (sifted before adding to the dough);
  • 4 eggs;
  • 300 g sugar (white or brown);
  • 400 ml milk (remove from the refrigerator in advance);
  • 100 g plums. oils;
  • 1 lemon (you only need its zest);
  • 1 tsp each baking powder, soda, vanilla sugar;
  • 1 small pinch of salt;
  • fresh berries or fruits and nuts for decoration in any quantity.

Cream:

  • 800 g mascarpone;
  • 200 g powdered sugar;
  • 2 tsp. lemon juice.

Cooking time: 3 hours.

Calorie content per 100 g: 338 kcal.

Melt the butter in the microwave or in a water bath and leave to cool. Mix flour, sugar, baking powder, salt and soda in a bowl. Beat the egg whites until they form a stable foam.

In a bowl, add yolks, butter, milk, zest to the flour and mix thoroughly. Then, stirring constantly, add the whipped whites. Mix a homogeneous, lump-free dough.

Oven temperature for baking is 170 degrees. It needs to be heated in advance. If one cake is baked, which will then be cut, it will take about 30-35 minutes. For individual layers – 25-30.

It is advisable to pierce the top of the cake with a fork in several places after 10 minutes of baking so that it does not swell so much. After the dough is baked, turn off the oven, remove the cake from the mold, turn it over and let it cool simply on a wire rack. If there are bubbles on the surface or it is too uneven, the top can be cut off.

All products for the cream are mixed and beaten well for 5-7 minutes. The cream can be prepared for all tiers at once by calculating the amount of ingredients. It can be stored in the refrigerator without losing its properties.

To assemble the cake, you need to bake all the layers and prepare the cream. The real dessert will be tastier, so you can assemble the tiers separately and leave them in the refrigerator overnight.

Immediately before the celebration, the tiers need to be placed on top of each other, level the visible surface of each of them with a spatula, add cream to the sides and level them too, leaving sections of the sponge cake peeking out.

Then you can start decorating. The easiest way is to place fresh berries and fruits on the surface of the tiers, sprinkle them with powdered sugar and nut crumbs on top. You can choose products of different colors to make the cake brighter.
