Ingredients:

I baked a half portion of the dough with one cake in a 24 cm pan. In the original, you need twice as many ingredients for 3 cakes in a 24 cm pan or 2 cakes in a 25x35 cm pan. I give a half portion and a full portion in parentheses.

  • 4 eggs (8);
  • 3 tablespoons of sugar (6 tbsp);
  • 250 g sunflower halva (500 g);
  • 50 g breadcrumbs (100 g);
  • 0.5 cups of flour = 75 g (1 cup of flour = 150 g);
  • 1 teaspoon baking soda (2 tsp);
  • 1 tablespoon of vinegar 6% (2 tbsp);
  • A pinch of salt;
  • 0.5 tablespoon of sunflower oil (1 tbsp).

For cream:

  • 100 g butter;
  • 200 g condensed milk;
  • 75 g walnuts.

For the glaze:

  • 50 g chocolate;
  • 2-3 tablespoons of sour cream (or milk, or 1.5 tablespoons of butter).

What kind of celebration is it suitable for?

A cake in a similar color scheme would be appropriate for any wedding where green shades are a priority. This can be not only a wedding dedicated to a given color, but also celebrations decorated in a certain style.

To achieve a beautiful color, soak the nuts for 10-15 minutes, rinse well, dry and roast.

Sift the flour and gradually add it to the egg foam, continuing to beat, but at minimum speed. Add nuts and mix gently. Pour into a springform pan with a diameter of 22 cm. Place in a preheated oven at 180°C. Bake for 35-40 minutes.

Remove from the oven onto a wire rack and let cool completely. Wrap in cling film and place in the refrigerator overnight to stabilize. Cut the rested biscuit into three parts.


Pistachio sponge cake

Pistachio layer

  • Pistachios – 180 gr
  • Condensed milk – 240 gr

180 gr. Grind the pistachios in a blender, adjusting the grinding amount to your taste. Mix condensed milk at room temperature with ground nuts. The glaze for frosting is ready.

Cream cheese cream

  • Cream 33% – 350 g
  • Cream cheese – 350 gr
  • Powdered sugar - 50 g

Chilled cream cheese, place cold cream and powder in a mixer bowl and beat. Transfer the cream and layer into pastry bags.

We assemble the cake in a ring. We fill the sides of the circle with acetate film, place the cake layer, squeeze out the cream, and spread it evenly. If you like moist cakes, soak the sponge cake with standard syrup of 100 grams of sugar and 100 ml of water. We make a side of cream, spread the glaze, and cover with a sponge cake. We repeat the procedure, thinly coat the top layer with cream. Leave a little cream for coating the sides.

Cover with film and leave in the refrigerator overnight. Thus, dessert should be prepared 2 days before the required date. You will need additional cream for leveling. Cream cheese, ganache, and custard in butter are suitable. Decorate with roses, chocolate, nuts as desired.

How to decorate

The confectionery product may be open or covered with icing or fondant. At the request of the newlyweds, it is entirely made in shades of green or combined with decor in other colors. A good combination with the following colors:

  • violet;
  • pink;
  • gold;
  • peach;
  • red;

In the cold season, it is better to give preference to decorating the dessert in olive or blue-green color. In summer or spring, green wedding cakes are decorated with the following decor:

How to make green velvet cake?

Preheat the oven to 190°C and prepare two identical baking dishes.

Beat eggs with vegetable oil, melted butter, buttermilk, vinegar and food coloring until smooth.

Place the dry ingredients in a separate bowl and mix. Slowly add the mixture to the mixture prepared in the above step. Place on the stove and heat for a minute, stirring and not bringing to a boil.

Pour the batter evenly into the pans and bake for approximately 30 minutes. Cool completely until creamed.

I have noticed more than once that if there is soda in the dough, when reacting with berries or berry juice, as well as red wine, it gives a blue color. So, when it comes into contact with sunflower seeds during baking, the reaction of soda with halva gives a green color!

The photo shows that the cake turned green mainly in the middle, and around the edges it remained the usual golden brown color for pies.

Probably one of the reasons is that I baked one large cake at once, rather than several thin ones in turn. My cake baked for 25-30 minutes instead of 15, and the layer of dough was higher. I thought that it would remain like this, golden with greenery. However, then we noticed that as the cake with halva steeped, it became greener. The next morning, the remaining piece acquired a rich dark green color.

In order for the cakes to have a bright emerald hue, it is important to observe some more nuances. Firstly, only sunflower halva is suitable. Of course, you can add any kind of halva to the dough - sesame, nut, it will be delicious, but other halva will not give a green color. Secondly, the baking temperature should not exceed 180C. When heated too much, the color is lost. Thirdly, the finished cake must be layered with a dense, not liquid cream - for example, from butter with condensed milk. When soaked or coated with liquid creams like sour cream, the color also disappears. Baking powder should not be substituted for baking soda in this recipe.

How to order and serve effectively

How to make green cake?

Preheat the oven to 190 degrees. Grease three identical round cake pans and line them with parchment paper.

Whisk flour, cocoa powder, baking powder, baking soda and salt in a medium bowl; set aside. Whisk buttermilk, food coloring and vanilla in a tall bowl.

In a separate bowl, beat granulated sugar and butter at medium speed. This will take about five minutes until the mixture becomes very light and fluffy. With the mixer still running, slowly add the eggs and beat until completely combined. Reduce the beating speed to low and gradually add the flour and buttermilk mixtures alternately in small portions. You should have a completely homogeneous mass.

Divide the prepared dough evenly between the three pans. Bake for 20 to 25 minutes. Cool in pans for 15 minutes, then remove and cool completely.

To make the green cream for the cake, place the flour in a small saucepan. Carefully pour in about half a glass of milk, stir until the lumps are completely broken. Slowly add the remaining milk, stirring. The mixture should be very homogeneous. Heat it over medium heat, whisking continuously with a fork until it becomes very thick (about 5 minutes). Pour the mixture into a bowl, cover with cling film and cool completely. This will take about 45 minutes.

Using a mixer fitted with paddles, beat the butter and granulated sugar on medium speed until fluffy. Add the cooled flour and milk mixture a tablespoon at a time and mix until smooth. Attach beaters to mixer instead of paddles and add vanilla, salt and 3 to 5 drops of food coloring. Beat until very light and fluffy.

To assemble this green cake, place one cake on a plate, spread with frosting and repeat with the other cakes. Spread the remaining cream on the sides, sprinkle the dessert with colored sugar and decorate with sweets.
