  • 100 g butter
  • 5 tbsp. l. cocoa plus for coating cakes
  • 200 g sugar

  • 200 g vanilla crackers
  • 50 ml rum or cognac
  • salt
  • buttercream and/or nuts for decoration
  1. Remove the butter from the refrigerator in advance and bring it to room temperature. In a heavy-bottomed saucepan, combine cocoa, sugar, salt and 250 ml milk. Bring to a boil and, stirring gently, simmer over low heat for 3 minutes. The sugar should completely dissolve. Remove the pan from the heat. Cool the contents to room temperature, stirring occasionally to prevent a film from forming on the surface.
  2. Grind the nuts in a blender bowl. Break the dried bread and vanilla crackers into small pieces and grind in a blender until fine crumbs. If necessary, crush the mixture further with a masher.
  3. Using a mixer, beat the butter into a fluffy, light mass. While continuing to whisk, pour in the chocolate syrup from the pan in a thin stream.
  4. Reduce the mixer speed to minimum and add the bread-crumb mixture and ground nuts to the cream in several additions. Mix thoroughly until smooth. Pour in the rum and stir. Cover the pan with cling film and refrigerate for at least 5 hours.
  5. Using wet hands, form the mixture into cylinders or balls. Roll them in cocoa. Decorate with cream and/or nuts.
